The tree of life
Coconuts are eminent in Kerala. They are available in abundance in this lush and green state and are used extensively. Kerala is one of the leading producers of coconut in India.
Coconut trees, here, are known as Kalpa Vrikshams(trees with multiple uses). Every part of the coconut tree proves useful.
Their leaves are used for making sheds, baskets and doormats. Their husks are used for making coir(fibre used in making mats,brushes,etc.) The shells are used in making bowls, ladles, spoons, etc. Coconut fruit is the key ingredient in most keralite dishes. Malayalis have long been known to prefer oil extracted from fresh coconuts or dried coconuts(copra), for cooking. It is used for making the most simple as well as the most complex dishes. It has a unique taste and fragrance that gives a distinct touch to the food.
Coconut milk is also widely used in dishes. It makes gravies silky and rich. It is also used to make delicious payasams and various other sweets.
Coconut water (Elaneer) is a nourishing drink, filled with minerals and nutrients. It is known to contain antioxidants and is consumed widely.
